snowed in...

We've been snowed in these last few days (I'm sure many of you have been too!) with no choice of going out,  theres been lots of  sorting, making & planning, alongside the comfort of the fire, extra jumpers on & endless cups of coffee, oh & a little bit of baking!

Pecan & Date Rock Cakes

ingredients

* 100g plain flour * 125g Spelt flour * 2 tsp baking powder * 1/2 tsp salt * 1 tsp mixed spice * 125 grams unsalted butter * 75 grams golden caster sugar * 60 grams pecans chopped * 65 grams dates chopped * 1 large egg lightly beaten * 2 -4 tbsp milk

method

preheat your oven to 200C / 400 F /gas mark 6 and line a large baking sheet with baking paper * in a large mixing bowl combine the flours, baking powder, salt & mixed spice * rub the butter into the mixture until it resembles fine breadcrumbs * add the sugar, pecans & dates & mix * pour in the lightly beaten egg, & add the milk a little at a time until it all comes together, you don't want it to be too sticky * divide the mixture in to 10-12 balls, place on the baking sheet & lightly squish with a fork, sprinkle a little sugar on top * bake for 15-20 minutes until golden * leave to cool down
